Why not train more often?

Because recovery is where the adaptation happens, and recovery windows lengthen with age. A muscle challenged on Tuesday rebuilds slightly stronger by Thursday or Friday; challenge it again too soon, too often, and you accumulate fatigue instead of strength. Rest days are not time off from the program. They are the program.
